Eggcellent Easter Eggs

Easter was not quite the family weekend it should have been in our home this weekend. Kurt worked late on Friday and all day Saterday trying to meet a deadline for Monday. He also came down with the bugs the chldren have been incubating all week and was in bed on Sunday. We all missed church .. with snotty noses and such ...but Sunday Afternoon we did manage to get into the spirit of things and dyed some boiled eggs. This has become an Easter tradition in our home! Some of the neighbourhood kids joined in too.
I also made a cheesecake... I attempted the Carnegie's cheesecake from the recipe I found on their website. It turned out okay for a first time but I cooked it slightly too long so it isn't as creamy as it should have been. Like all good cheesecakes what is left is maturing in the fridge and it will taste even better when we get over our colds and it is worth eating again.

Kurt and I have wonderful memories of Carnegies. My brother sent us there when we went to visit him in Manhattan, New York in 2001. It was hard for us at the time to spend $7 (I think that is what it was) on a piece of cheesecake. It translated to R70.00. But we definately have never regretted it!! The recipe on the website does not give much guidance as to timing etc. when cooking so I wouldn't try it if you have not made cheese cake before. My friend, Shannon set me on to a great starter Raspberry Cheesecake - recipe on foodnetwork.com. By the way ... you should try this one Shannon!!
